At the weekend, I had the pleasure of attending a whole and raw foods cooking demonstration. Taste Budds Cooking Studio is a fantastic little cooking school in Perth which hosts a range of cooking classes and demonstrations covering so many different culinary areas. I attended one about whole and raw foods, which demonstrated not just how simple and delicious simple whole food dishes can be, but also how an otherwise average meal can be elevated into an extraordinary one through the use of a range of (edible) savoury and sweet essential oils (in this case, provided by doTERRA oils).
It was such an intriguing demonstration. Being unfamiliar with the use of essential oils, I was dumbfounded by the idea that they can also be used in cooking. Sophie, owner of Taste Budds and qualified chef, whipped up a number of dishes with enviable ease which I felt inspired to replicate at home. Her extensive knowledge of simple yet sensational flavour combinations was testament to the fact that cooking needn't be complicated in order to produce a fantastic result.
Her Autumn Pumpkin and Cardamon Soup with Cashew Cream served with Gluten Free Buckwheat bread was my favourite dish of the day. Once the weather cools down, I'll be sure it's the first dish I make! I was also in pasta heaven with her creamy Spelt Pasta with Mushroom, Thyme, Garlic and Lemon. She made the otherwise quite daunting task of homemade pasta making look so quick and easy. The use of spelt was a lovely replacement for 'regular' flour; I already prefer to use spelt flour in my baking as it is, but after trying Sophie's pasta, I'm slowly beginning to preference it entirely! I think what I like about it is the distinct nutty taste which worked wonderfully in the pasta.
To finish, we were treated to a raw lime and lemongrass 'cheesecake'. If I was given a bowl filled with the base for this cheesecake, I would be one happy girl! A mixture consisting my all time favourite nuts (brazil, hazelnuts and macadamias) along with medjool dates, honey and coconut oil, it was an absolute treat! The creamy cashew 'cheese' mixture was also wonderful and proved once again the outstanding results that can be achieved with simple flavour combinations.
